Abstract:
نظرا لأهمية الألياف الغذائية بالنسبة للإنسان وتحسينها لصفات بعض المنتجات الغذائية, واستهدف البحث دراسة تأثير اضافة البكتين الغنى بالالياف المحضر من قشور الليمون والبرتقال البلدى بنسب 0.5 ,1.0 ,2.0 % وصمغ الزانثان بنسبة 0.25% على خواص العجين
