Role of small and large scale producers in transmission of food poisoning organisms through consumption of ice cream

Abstract:
One hundred and twenty random samples of each of small scale ice cream and large scale ice cream samples collected from groceries , peddlers and supermarkets in Sharkia Governorate were examined for their sanitary condition.-The results of methylene blue reduction test of examined ice cream samples revealed that 11 of examined small scale samples (9.2%) were graded I, while 28 ( 23.3% ), 57 ( 47.5% ) and 24 ( 20% ) were graded II , III and IV respectively. But in case of exa-The bacteriological examination of ice cream samples showed that mean coliform count/g. in examined small scale samples was 4.3×106 ,4.9×106 and 3.2×106 for plain , fruit and chocolate ice creamsamples respectively,while coliform organisms in examined la-The most prevalent Coliform species isolated from examined small scale ice cream samples were Citrobacter Freundii ,Enterobacter Aerogenes Enterobacter Cloacae,Erwinia
