Abstract:
The Present Work Was Carried Out To Investigate The Following Problems: The dtimum conditions for maximum precipitatio of whey proteins by using some types of polyelectrolytes e.g. Carboxymethyi cellulose and sodium metaphosphate. the poasibility of producing soft cheese of acceptable quality from milk onriched with whey protein concentrates obtained by the foragoing mentioned methods.
