Abstract:
As a general conclusion the characterization of the oil that was extracted from the kernel of Moringa peregrina and Moringa oleifera seeds showed that those oils could be utilized successfully as an edible oil for human consumption. It contains a high ratio of monounsaturated to saturated fatty acids which may be characteristic for highly monounsaturated oils such as olive oil which is known by its health benefits. This would certainly offer a partial solution for oil deficiency in Egypt. Furthermore, the seed cake left over after the oil extraction process has several uses. It could be used in the treatment of turbid water, it is being researched as animal feed, but certain antinutrional factors must be dealt with before use, it is suitable for feeding live stock.
