Abstract:
Hence, the purpose of this work was to employ this reaction for the modification of some food proteins; wheat gluten, corn zein and egg albumin. The modified proteins were assayed for their functional and chemical properties. The reaction was further ddeveloped to include the simultaneous binding of some minerals such iron and calcium to gluten.
