Abstract:
To Characterize the individual cell wall polysaccharides ( e.g.Pectic Substances, Chemicellulose and Cellulose ) of mango and Guava fruits during the ripening process. - to investigate the changes in pectin factions as affected by the fruits endogenous (native) enzymes.to study the effect of exogenous enzymes such as technical enzyme preparation and purified fungal-pl on the degradation of cell wall material.
