Abstract:
the Present investigation jnvolved: 1- isolation of oat protein ( as an example of vegetable protein; the isolated protein was characterized by gel electrophoresis and its functional properties were assessed .2- Procedures were developed for producing dairy protein \ oat protein co-precipitates which were characterized by gel electrophoresis and their functional properties were assessed.
