The present work was carried out as an attempt to produce some special dairy foods with enriched protein content and good acceptability to be suitable for Consumer demands especially children and dietic purposes the work was undertaken into three parts.Second Section. was concerned with with the production of Anew Egytian fermented Milk. this part was concerned with the production of processed cheese food enriched with vegetable and whey proteins.
