Studies On Improvement Of Balady Bread Quality

Put unified standard conditions for balady bread production by addition of different concentrations of mait, so that it would be possible to overcome it’s low quality, e.g. to stabilize the shape and physical appearance of the loaf, together with the attempt of improving its nutritional value.
