Abstract:
the first part was concerned with the possibility of replacing the imported cheddar cheese by cheese-curd slurry in the manufacture of egyptian processed cheese. the second part was carried to assests information on the quality of processed cheese spread (Abou-El-Hool) madefrom blends containing rapidly ripened directly acidified ras cheese.
