Abstract:
The nutritive value of protein depends primarily on its capacity to satisfy the needs for nitrogen and essential amino acids . The evaluation of protein quality starts with nitrogen and amino acid analysis, moves through a series of specific chemical measurements and finish with some biological tests which are based on the retention of nitrogen in the body, or methods for utilizing nitrogen balance or growth as criteria of nitrogen retention . The aim of this work is produce mixtures which are with highly nuritive value, from plant protein supplemented with animal protein or some by-product . However, protein metabolism is humans and animals can be studied by awide variety of indirect criteria. the study cunducts to investigate the relation between the protein status of an individual and bio-chemical parameters such as serum protein, serum amino acids,urinary creatinine excretion and hemoglobin and hematocrite.
