Abstract:
The Aim Of This Study Was To Chemically, Nutrition-ally And Microbiologically Evaluate Gizzard, Heart, Liver and intestine from poultry wastes. it was also tried to make use of sich chicken edible by-products as sausage, ”foie-gras”and soup. the acceptability for human consump-tion, nutrititive value, quality and keeping ability of the processed products were also evaluated.
