Abstract:
The preservation of fruitjuices has been a continous gool of the civilzed man till the present time.fruit and vegetable Juices have made great strides in pastdecade, Dlfferent methods are in use for the preservation of fruit and, vegetable Juices. Among the rmostly used, methods for this purpose are freezing, canning and dhydration Freezlng-durying procedure haye been lntrodUsed. rather recently to the cornmercial production of dehy drated, fruit juices. the aim of this work is to study the biochemical changes which may take place in the organic acids, amino acids, proteins, sugars, L. ascorbic acid, certain enzymes such as peroxidase, dehydrogenase during the storage of guava juice.
