Abstract:
The dose of bacteria necessary to infect or to produce sufficient toxin to cause symptoms which vary with different organisms and also with the resistance of the person who swollows the food. the number of organisms in a particular food substance at any given time will depend on the nature of the foodstuff, its temperature and the length of time it has been kept.
