Abstract:
The main object of the primitive dairy industry in Egypt is to separate milk fats as butter, and transforming the remaining skim milk to other products wich very according to climatical conditions and locality. The Persent study was undertaken to supply information on the microbiology of these fermented milk products, of wich little is known.
