Abstract:
It has been thought beneficial to study the processing of such fillets and to investigate some of the problems which might be encountered . this investigation was carried out to study the following: 1- to study the chemical, physical, microbiological and organoleptic properties of Bolti Fish fillets during cold and partial freezing storage. 2- To study the effect of some different treatments ( Na C1 And antibiotic ), which may affect the keeping quality of filleted Bolti fish.
