Microbiological studies on some popular foods

Abstract:
Fifty samples of halva tahinia, pressed dates, destoned pressed dates and date paste (minced dates) were collected from 5 Egyptian Governorates (Cairo, El-Sharkia, El-Dakahlia, Alexandria and North-Sinai). Microbiological profile of bulky size products served in slice form was evaluated with regard to the following groups of microorganisms: aerobic bacterial counts, spore-forming aerobic bacteria, Bacillus cereus, Staphylococcus aureus, coliforms, Escherichia coli, Clostridium perfringens, Salmonella sp., Shigella sp., Yersinia enterocolitica, molds and yeasts. In all of the studied samples, Cl. Perfringens, Salmonella sp., Shigella sp. and Y. enterocolitica were not in detectable levels.Computerized identification of yeast isolates from these products was done using the Vernetzungsdiagram as well as numerical taxonomy. Morphological and physiological characters could be used for yeast taxonomy. One hundred and forty two yeast cultures were isolated from the products and identified as: Debaryomyces hansenii, Saccharomyces cerevisiae, Schizosaccharomyces pombe, Pichia membranaefaciens, Torulaspora delbrueckii, Zygosaccharomyces rouxii, Hansenula anomala, Candida bombi and Candida silvatica.
