Application of endolysin LysPEF1-1 with cinnamon bark against planktonic and mixed-species biofilm cells of Listeria monocytogenes and Enterococcus faecalis on various food and food contact surfaces

Abstract:
This study evaluated the synergistic antimicrobial activity of the bacteriophage-derived endolysin LysPEF1-1 combined with cinnamon bark essential oil against Listeria monocytogenes and mixed-species biofilms formed with Enterococcus faecalis. The combined treatment significantly enhanced bacterial inactivation and biofilm removal compared with either treatment alone and was effective on food products and food-contact surfaces, highlighting its potential as a natural strategy for improving food safety.
