Abstract:
The increasing demand for sugar had developed research for the production of sweetner . Waste of coming from food industry find its use in the production of sweeteners as substrate for sugare . Broken rice represents 17% of the milling industry . Much researchs and many efforts have been spent on the recovery and reuse of agricultural residues in the production of sugars . One of these processes is the enzymatical hydrolysis . Which converts some agricultural residues into glucose . Promising research work have been done on the enzymatic hydrolysis of cellulose and starch containing materials for glucose production . This investigate study the possibility of using broken rice as a by-product coming from rice mil-ling industry,as a raw material for the produtin of glucose and fructose syrup. for comparison broken rice and isolated rice starch were used in this study.
