Abstract:
Inrecentyears,thereisanincreasinginterestofusingtheessentialoils(EOs)basednanoemulsionsasnaturalantioxidantscandidatesforwiderangeoffoodapplications.Theupsurgeinthiscurrenttrendisaclearindication highlightingthe consumer’sdemandfor healthierfood productswithimproved stability,safetyandfresh-like sensoryproperties.Theprominenceofbiopolymersinthefieldofnanotechnologycannotbedenied.Inthisperspective,possessinguniqueproperties,biopolymerssuchascarbohydrates,proteinsandlipidshavebeenfetched muchattentionsasemulsifiersandstabilizers.Inthisregard,biopolymerbasednanoemulsionsloadedwithEOs offergreatavenuesto achievethe desiredcharacteristicssuchasoxidativestability,thermo-stability, shelf-life andbiologicalactivityinfoodproductsaswellasminimizethechoiceofapplicationsofsyntheticpreservatives atthesametime.ThisreviewpresentsanupdateofrecentliteratureonmajorsourcesofEOs,theirchemicalcompositions,aswellashighlightsthe formulation andfabrication ofbiopolymerbasednanoemulsionsentrapped withEOs.Oureffortencompassesthediscussiononfeasibilityofloading ofEOsintothenanoemulsiondelivery systemsembeddedwithdiversekindsofbiopolymers,their antioxidantpotentialasapreservationstrategyto delayand/orhalttheoxidationprocessinwiderangeoffoodproductapplications.
