Effect of some antibiotic residues on the microbial quality of Meat and Meat products

Abstract:
Using of antibacterial effected in the animal farms without control,this using not only for protection or treatment but also to increase thegrowth rate to get much money by illegal ways. Recent studies proved thatthese residues have many hazards if consumed by man now public healthauthorities in different countries have established different regulation forveterinary use of the drugs in food of animal origin.Therefore, this study was carried out to investigate the presence ofantibacterial residues in beef meat and meat products using microbiologicalinhibitory assay and effect these residues on microbial quality of meat andmeat products using microbiological examination.PART 1:Detection of antibacterial residues in samples of meat and meatproducts:80 samples representing (20 samples each of fresh meat, mincedmeat, beef burger and fresh sausage) were collected from different shops atSharkia govemorate for detection of antibacterial residues using microbialinhibition test. The results revealed that 6 samples of meat and meatproducts were positive for antibacterial residues with a percentage of 7.5%.The prevalence of residues was obtained in sausage samples, (6) 30%,which non of antibacterial residues were detected in meat samples, burgersamples and minced meat samples.
