Prevlence of listeria orgaisisms in meat and some meat products with a trial to improve their saitary conition

Abstract:
Meat and meat products constitute available part of the diet,they are a good source of the first class protein as well as othernutrients as fat and minerals. However consumption of suchpalatable and nutritious foods may cause many hazards to the consumers, probably due to contamination with various food borne pathogens.During the last few years, the factories of meat products weredeveloped and widespread every where, also the retails shops become the source for many food poisoning disease especially those take away foods. Meat products are very delicious food due to their additives of spices and herbs which give pronounced flavouraroma.Human listeriosis is sporadic disease which associated with consumption of unsufficient cooked meat, contaminated milk, soft cheese, unwashed raw vegetables and cabbage.The post processing contamination of ready to - eat meatproducts with Listeria spp. could be a potential hazard. L.monocytogenes has been recognized as a major food born pathogenespecially food which are not exposed to heat treatment. Because ofits ability to survive and proliferate at a refrigeration temperature L.monocytogenes may cause disease through frozen foods. So a totalof 250 samples representing 150 samples (raw fresh meat, fresh andfrozen sausage, frankfurter, luncheon and shawerma) 25 of each and100 samples (frozen minced meat, meat and rice kofta, hamburgerand hawawshy) 20 of each were randomly purchased from shopsand supermarket in Dakahlia Govemorates, Egypt and examinedfor:
