Hygienic Status of Yoghurt In Zagazig Markets

Abstract:
Seventy five random samples’ c , large scale (25each of plain and fruit yoghurt) and 25 small scale yoghurtsamples were collected from different dairy shops andmarkets in Zagazig City, Egypt to be examined for sanitaryand quality tests.The obtained results revealed that the highest’frequency distribution of examined yoghurt samples basedon suggested score for organoleptic examination (68%) ofexamined large scale plain yoghurt samples lies within therange of 93-100%(no defect), while (44%) of examinedlarge scale fruit within the same range and (40%) ofexamined small scale plain yoghurt lies within the range of67-73%(pronounced defect).ItOs evident from the obtained results that the meanacidity% in large scale plain and fruit yoghurt samples was1.04% and 1.22% respectively, while in case of small scaleyoghurts was 1.19%.The obtained results revealed that the meancoliform countlg in examined yoghurt sampleswas1.16x104, 1.1x1Q4, 8.9x105/ gm for large scale plainand fruit and small scale ones respectively. The mostprevalent coliform species isolated from examined largescale yoghurt samples were Citrobacter frendii,
