Enteropathogenic E.coli in some meat products with special reference to 0157

Abstract:
Meat is the most important source of food for people in everywhere as it supply the consumers with the needed nutritive elements suchas high quality proteins, including essential amino acids, B-complexvitamins which is absent in plant foods and certain minerals especiallyiron and phosphorous beside that meat has high calories value.Meat products are considered one of the most products whichattract the consumers for its palatability, low price and easily preparationthan fresh meat.A total of 80 samples were taken from the meat products includingminced meat, burger, sausage and luncheon were collected fromdifferent super market at Sharkia governorate to be examinedbacteriologically for detection of Enteropathogenic Escherichia colimicroorganism.the obtained results indicated that the mean value of most probablenumber of coliforms(MPN) of the examined meat products samplewere 2.57 x 105 ± 8.69 x 104,3.09 x 105 ± 1.05 x 105, 3.02 x 105 ± 9.06 x104and 6.2 x 104 ± 1.02 x 104 Minced meat, Burger, Sausage andluncheon respectively.This results revealed that no significance difference in totalcoliform count and the major distribution of total coliform count was 104- <105 (25%), >106 (25%), 104 - <105(30%), 103 - <104 (45%)for Mincedmeat, Burger, Sausage and luncheon respectively.
