Mycological aspects of some chicken meat products

Abstract:
Sixty samples of poultry meat products were collected from different supermarkets at Zagazig , Sharkia governorates and examined for detection of mould contamination as well as aflatoxin produced at luncheon and minced meat samples. In chicken luncheon thIn chicken frankfurters the percentage of contamination with mould were 86.6% with a mean values of 47.20 + 13.98.The mould genera isolated from chicken frankfurter were Apergillus niger , penicillium and absidia with the following number and percentage 10 (66.66%) ; 5 (33.336%) and 1 (6.66%), respectively..In chicken minced meat the percentages of contamination with mould were 86.6% with mean values of 53.33 + 21.25 . The mould genera isolated from chicken minced meat were Aspergillus (which further identified into Asp. niger and Asp. flavus), penicillium, In chicken panne, the parentage of contamination with mould were 93.33% with a mean values of 44.60 + 13.28.
