Some Harmful Residues In Marketed Chicken Meat

Abstract:
A total of One hundred random samples of breast muscle, thigh muscle, liver and kidney of poultry (25 of each tissue) were collected from different markets in Zagazig city. The samples were collected in polyethylene bags, all of which were kept in ice box1- Cadmium (Cd):The residual concentration level of Cd (ppm) in breast muscle, thigh muscle, liver and kidney of examined broiler carcasses was in a range of 0.05 to 0.074, 0.024 to 0.068, 0.042 to 0.082 and 0.042 to 0.082 with a mean value ± SE of 0.065 ± 0.002, 0.041 ±All samples (100 %) were within the permissible limits (0.1 ppm).2. Lead (Pb):The results recorded in Tables (1,2,3 and 4) revealed that the mean values ± SE of lead (mg/kg) in breast muscle, thigh muscle, liver and kidney samples of the examined broiler carcasses were 0.22 ± 0.036, 0.11 ± 0.014, 0.256 ± 0.02 and 0.196 ± 0.0232 ppmIt is cleared that 17 of analyzed samples (17.0 %) are over permissible limits of lead levels.
