Incidence and public health importance of bacillus cereus in meat and some meat products

Abstract:
A total of 120 random samples of meat and meat productsincluded fresh meat, frozen meat, minced meat, beef burger,luncheon and sausage were collected from different localities inDakahlia Province for enumeration and isolation of Bacilluscereus.The results showed that the incidence of B. cereus in theexamined fresh meat was 45%. The highest frequencydistribution was 66.67% lies within the range of 103 < 104/g. Theminimum B. cereus count was 7 x 102/g and the maximum was3.7 x 104/g with a mean value of3.5 x 103/g ± 0.78 x 103,Incidence of B. cereus in frozen meat was 65%. The highestfrequency distribution lies within the range of 102 to < 104/gwhich constitute 38.46% of both frequency. The minimum B.cereus count was 1.1 x 103 /g and the maximum count was I x105/g with a mean value of7.76 x 103/g ± 5.03 x 103.B. cereus was isolated from minced meat as 550/0 with aminimum count 2.1 x 103/g and maximum one 3 x lOs/g. Themean value was 4.46 x 104/g ± 2.05 x 104. The highest frequencydistribution lies within the range of 103 to < 104 which constitutes45.46%.
