Mycological Aspects of Salted Fish Marketed in Zagazig City

Abstract:
A total of 100 random samples of salted fish (50 from each of Mugil Cephalus (feseikh) and Sardine) were collected from Zagazig markets.I-Feseikh samples:1) The total mould count ranged from 1x102 to 9x103 with a mean value of 1.7x103 ±0.273x103 /gm.2) The predominant mould genera isolated from examined feseikh sample were Aspergillus 35 (70%), Curvularia 18(36%), Aureobasidium 17 (34%), Penicillium 17 (34%), Bipolaris 9 (18%), Fusarium 7 (14%), Cladosporium 4 (8%), Sporothrix 3(6%), Chrysosporium 2 3) Concerning Aspergillus species identification for the examined feseikh samples revealed that, the identified species were Aspergillus niger, A. flavus, A. terreus and A. fumigatus with an incidence of 11(22%), 30 (60%),1 (2%) and 7 (14%) respectively,
