Microbial Aspects of Some Fresh Water Fish Marketed in Zagazig City

Abstract:
Nowadays, fish constitute one of the most important foodstuffs; it provides the man with the animal protein of high biologicalvalue besides their high palatability and good digestibility. Fish haslong been regarded as a nutrition and highly desirable food due toits contribution of high quality animal protein, its richness incalcium, phosphorus and generous supply of vitamins.Fish was subjected to so many risks of contamination, suchcontaminates may find, their way through many sources then maygrow and multiply in fish rendering it unfit for human consumption’.Therefore this work has been planed to fulfill this gap using threespecies of fresh water fish (Tilapia nilotica. Mugil cephalus andClarias lazera) which were the most popular consumed fish inZagazig city.A total of 90 random samples of fresh water fish (30each ofTilapia nilotica, Mugil cephalus and Clarias lazera) were collectedfrom different fish markets distributed in Zagazig city. Organolepticand Microbiological examinations were conducted as soon aspossible. The obtained results were recorded as:A- Organoleptic examination:The mean value of organoleptic examination of Tilapia nilotica,Mugil cephalus and Clarias lazera was 76.033±1.486%,78.97±1.369% and 72.90±1.276%, respectively.
