Microbial staus of natural animal casings used in sausage manufacture

Abstract:
Summary:-A Total of 153 intestine samples of slaughtered cattle (43), local sheep (36),imported sheep (38), goat (36) were collected from a government sl~ughterhouse.Moreover, 11 salt packaged casing samples were collected from a casing processingcompany.All collected samples were taken under complete aseptic conditions andtransferred to the laboratory without undue delay.The obtained results declared that the mean values of APC were 5.912 x 10\8.567xlO\ 13.610 x104 and 14.150 x 104 for the examined cattle, local sheep,imported sheep, and goat intestine samples, respectively.The respective mean values of Enterobacteriaceae counts were 13.093 x 1037.206 X 103, 13.700 X 103 and 12.722 x 103 for the examined cattle, local sheep,imported sheep and goat intestinal samples, respectively.While, the mean values of coliform counts were 12.628 x 102, 9.972 X 102,25.605 X 102 and 19.222 x 102 for examined cattle, local sheep, imported sheep andgoat intestinal samples, respectively.The mean values of Staphylococcus aureus counts were 4.721 x 103, 2.306 X103, 1.211 X 103 and 3.222 x 103 for examined cattle, local sheep, im’ported sheep,and goat intestinal samples, respectively.Mean values of Total APC, Total Enterobacteriaceae, Total coliform andTotal Staph. aureus of examined sheep salt paeked casings were 61.8 x 104, 12.9 x103 , 21.81 x 102 , 11.36 x 103 respectively.Importance of isolated microorganisms as well as suggested hygienic measureto improve the quality of the intestine used for casings was discussed.
