Abstract:
Three hundred random samples of chicken cut - up (70 fromeach thigh’ and breast and 80 from each neck and wings) werecollected from markets, and shops. The samples were subjected tobacteriological examination.9-1- Total bacterial count:The results of total bacterial count proved that the log meanvalue of thigh samples was 7.49 ± 7.084/cm2 for skin and 7.24 ± 7.012for muscles of the same thigh samples and the log mean value ofbreast skin muscles samples were 7.31 ± 7.013 and 7.15 ± 7.01,respectively while the log mean value of examined neck and wingsamples were 7.80 ± 7.039 and 7.43 ± 7.019, respectively.9-2- Total enterobacteriaceae count:The results showed that the log mean values ofenterobacteriaceae count/gm of examined thigh and breast samplesskin and muscles. Samples were 3.78 ± 3.012; 2.50 ± 2.021 for thighand 3.24 ± 3.062 and 2.95 ± 2.041 for breast, respectively while thecount for neck and wing samples were 4.68 ± 4.072 and 3.80 ± 3.051,respecti ve I y.9-3- Detection of enterobacteriaceae :The results indicated that citrobacter diversus, Cfreundii,edwardisella, enterobacter agglomerance, Escherichia coli, klebsiella,
