Abstract:
A total of 160 samples were taken from the outer surfaces ofshoulder and thigh of cattle carcasses, slaughtered skinned,eviscerated, prepared and post-mortem examined at Zagazigtraditional abattoir just before stamping and passed as fit for humanconsumption.Samples were collected according to the following scheme:40 samples (20 each of the outer surfaces of shoulder andthigh regions) were collected using each of swab and surface tissueexcision techniques, 10 samples with each just before stamping andwithout any treatment,40 samples (20 each of the outer surfaces of shoulder andthigh regions) were collected using each of swab and surface tissueexcision techniques, 10 samples with each after spraying the outersurfaces of the examined shoulder and thigh regions with a solutioncontaining 20/0 lactic acid for one minute by a clean hand- held non-corrosive, plastic spray er.
