Abstract:
Estimation of biogenic amines, trace elements and nitrite in foodof animal origin such as corned beef, dry sausage, minced meat and beefburger is of great importance for the public health point of view andelevation of these elements in food reflect a hazard to consumers, Thepresent study was performed to determine the concentrations of somebiogenic amines (histamine and tyramine), heavy metals (cadmium andtin) and nitrite as a preservative in the previously mentioned meatproducts.A total of 80 samples- were collected from different supermarketsat Giza Governorate, 20 samples from each of corned beef, dry sausage,minced meat and beefburger.The obtained results revealed that mean values ± S.E. ofhistamine and tyramine (mg/100g) levels were 0.75±0.29l and 5.30±1.22 in corned beef; 4.07 ±O.887 and 29.81 ±3.83 in dry sausage; 3.29±0.833 and 12.81 ±1.120 in minced meat while, they were 2.60 ±0.643and6.99 ±O. 92 in beef burger.The obtained findings showed that mean values ± S.E. ofcadmimn and tin (ppm) in corned beef samples were 0.24 ±0.84 and 0.01
