Microbial association in cool stored poultry

Abstract:
Skins of 25 chickens broiler carcasses were examinedbactriologically, as fresh samples after commercial processing,evisceration, and finishing in, poultry shops (at Zagazig City) ofdifferent sanitation levels; as refrigerated samples every day of airrefrigeration at 4 to 5 QC for 3 successive days; and as frozensamples every month of air freezing at - 17 to - 18 QC for 3successive months, for determination the total counts of aerobes,psychrotrophs,and Enterobactriaceaecoagulase-positi veStaphylococcus aureus per ern” of their surfaces, besides theidentification of isolated Gram-negative and positive psychrotrophicbacteria in all samples.The mean values of total counts of aerobes, psychrotrophs,Enterobactriaceae, and coagulase-positive Staphylococcus aureuswere 9.82 +1.38 x 104, 1.27 ± 0.31 x 104, 4.78 ± 1.31 x 103, and8.97 ± 1.53 x 102 organisms per cm ’ of fresh skins, while thesevalues were gradually and significantly increased by refrigeration to2.41 +0.47 x 105,3.12 ± 0.47 x 104,8.19 +1.9 x 103, and 8.9 +1.47x 102 cells per ern” of 1 day refrigerated skins; to 7.19 +1.81 x 1059.11 ± 1.31 x 104,9.93 ± 1.68 x 103, and 9.03 ± 1.71 x 102 CFU percm” of 2 days-refrigerated skins; and to 1.35 +0.37 x 106, 9.14 ±2.61 x 105, 2.09 +0.31 x 104, and 9.08 ± 1.91 x 102 organisms perern” of3 day refrigerated skins samples, respectively.
