Bacteriological Aspects of Emergency Slaughtered Animals

Abstract:
A total of 240 samples of meat and internal organsobtained from muscles (of fore & hind quarter), liver, spleen,kidneys, lymph nodes (of fore & hind quarter , mesentric,hepatic lymph condes) and gall bladder were collected from 40emergency slaughtered cattle in Damietta. All collectedsamples were well identifiable and transferred without delayto the laboratory where they were examined bacteriologicallyand chemically for determination of keeping quality of meat.Concerning the Aerobic plate count: the mean count were6.2 x105 ± 2.1 x105 ; 5.3 x106 ± 1.2 x 106 ; 3.4 x106 ± 1.1 x106 ;8.7 x105 ± 3.2 x105 ; 7.2 x105 ± 2.3 x105 and 7.4 x105 ± 2.3x105/g in examined muscles, liver, spleen, kidney, L. nodes andgall bladder samples of emergency slaughtered cattle,res pecti vely.Enterobacteriaceae: The mean count of Enterobacteriaceaeper gram of examined samples of muscles, liver, spleen, kidney,L. nodes and gall bladder were 6.2 x102 ± 1.8 x102 ; 5.8 x103 ±1.3 x103 ; 2.3 x103 ± 4.6 x102 ; 5.1 x102 ± 2.3 x102 ; 3.8 x102 ±1.2 x102 and 1.5 x103 ± 4.9 xl02, respectively.Coliform count : The mean count of total Coliform /g inexamined samples of emergency slaughtered cattle were 4.8 x102 ± 1.1 x102 in muscles, 9.5 x102 ± 3.1 x102 in liver, 6.5 x 102± 2.1 x102 in spleen, 5.5 x102 ± 1.5 x102 in kidney, 4.9 x102 ±1.2 x102 in L. nodes and 5.8 x102 ± 1.4 x102 in gall bladder.
