Abstract:
Summary:-Shellfish is a highly nutritive and delicious food, consumed by largepopulation in different countries in the world, however, they may be carrying many parasitic agents transmissible to man where shellfish eaten raw orinadequately cooked, so this study was conducted to clarify the role of shellfishA survey was conducted to determine the hygienic quality of concentratedand raw milk samples.The obtained results revealed that the mean values of acidity in examinedmarket and bulk raw milk were 0.20 ± 0.0007 and 0.21 ± 0.0007 respectively.,The methylene blue reduction time showed that 64 % of examined rawmilk samples had a reduction time 5 hours or more while 36% had a reductiontime less than 5 hours.The mean total colony counts/ml of examined market and bulk raw milkswere 3.7 X 107 and 2.7 X 107 respectively.Prevalence of coliforms contamination were 84% and 74%, while themean coliform counts (MPN/ml) were 5 X 102 ± 0.85 and 77.8 +0.30 for marketand bulk raw milk samples respectively.Prevalenc~ of E.coli in the examined market and bulk raw milk samples.• ~!C 66% and 86% with mean value of39.6 + 0.99 and 6.2 + 0.63/m1 of milk- -:espectively.Out of the tested E.coli isolates (l0) E.coli serotypes (0152 poly 8), (026~Iy 1), (063 poly 5)~ (0164 poly 8) and (086a poly 1) represented 3,3,2,1,md 1 of the total isolates respectively.
