Abstract:
One hundred random samples (50 each of hand milk and machine milk) were collected from four dairy (large – small) farms in Sharkia Governorate.1- Total bacterial count:The average of total bacterial count in examined hand milk samples was ranged from 1.0 x 102 to 7.5 x 107 with mean of 3.4 x 106. While n case of machine milk samples the mean count of total bacterial count was 1.0 x 102 and ranged from 1.4 x 102 to 7.1 x2- Staphylococci count:The mean value of Staphylococci count in examined hand milk samples was 2.4 x 105. While in case of machine milk samples the mean count of staphylococci was 2.8 x 106 and ranged from 2.0 x 103 to 9.0 x 107.3- Enterococci count:Streptococcus faecalis, Streptococcus faecium and Streptococcus intermediate could be isolated from 78, 62 and 56% of examine hand milk samples with a mean counts of 2.4 x 104, 1.7 x 104 and 1.3 x 104 respectively.
