Studies on some food poisoning microorganisms in milk and some dairy products

Abstract:
One hundred random samples (50 of raw milk and 25 each ofkariesh cheese and ice-cream) were collected from dairy shops and streetpeddlers from different localities in Zagazig city, Sharkia Governorate,and subjected to bacteriological examination.The obtained results revealed that the mean coliform count/m!. org. in examined raw milk, kariesh cheese and ice-cream samples wetOe5.3XI07, 2.3XI07 and 5.7XI08, respectively.The most prevalent coliform species isolated from examined rawmilk, kariesh cheese and ice-cream samples were Enterobacter cloacae,Ent. gergoviae, Ent. agglomerans, Kleb. oxytoca, Kleb. pneumonae,Citrobacter diversus.Concernin& the staphylococci, the mean value in examined rawmilk, kariesh cheese and ice-cream samples were 2.08Xl 06±0.50Xl 06,1.3XI05±0.91XI05 and 2.4XI05±0.97XI05/ml. or g., respectively.Staphylococcus aureus and Staphylococcus epidermidis were thepredominated Staphylococci isolated from the examined raw milk,kariesh cheese and ice-cream samples.
