Sanitary aspects of normal and parasitic- infested liver of slaughtered animals at sharkia

Abstract:
Sixty fresh normal liver samples of cattle, camel and sheep carcassesslaughtered at Sharkia abattoir ( 20 of each) in addition to 20 of fluke-infestedliver samples of cattle were collected and subjected for organoleptic, chemical (pH) and microbiological examinations to evaluate their sanitary status.The result(. of organoleptic exan}ination revealed that the majority of theexamined normal liver samples of the examined animal species exhibited normal colour, consistency, as well as a acceptable odour , while fluke- infested cattleliver had lower percentages .Meanwhile, the mean values of pH for such normal liver samples ofcattle, camel and sheep were 6.19, 6.13 and 6.12~ respectively.The microbiological examinations revealed that the average aerobic platecount of the examined normal liver samples of cattle, camel, sheep and fluke-infested cattle liver samples was (3.16 x 106 ± 1 x 106), (9.7 X 106 ± 3 x 106), (7.4 X 106 ± 3 x 106) and ( 1.4 x 107 ± 7 x 106 cfu /g )~ respectively. WhileEnterobacteriacea a mean count was 8.4 x 105 ± 6 x 105, 8.3 x 105 ± 3 x 105 ,6.3 X 105 ± 2 x 105 and 8.8 xl05 ± 4 x 105 cfu /g of the same examined liversamples; respectively .
