Occurrence of Yeasts in Milk and Some Dairy Products

Abstract:
Two hundred random samples of milk, cream, yoghurt and Kareishcheese (each fifty ) were collected from different localities in Zagazig and its suburbs, to be examined for incidence of yeasts.The mean yeast count/ml. or g. in milk samples was 4.9xl04, incream was 1.2xl05, in yoghurt 4.4xl06, and in kareish cheese was1.7xl08.Candida species was present in 54%, 52%,48% and 66% of milk,cream yoghurt and Kareish cheese samples, respectively.Candida tropicalis proved to be present in 30%, 18%,6% and 34%of milk, cream, yoghurt and Kareish cheese samples, respectively.Rhodotorula species was detected in 22%, 200/0 and 6% of milk,cream and Kareish cheese samples, respectively. While it could not beisolated from yoghurt samples. Rhodotorula rubra was present in 22%,16% and 6% of milk, cream and Kareish cheese samples, respectively.
