Sanitary condition of locally manufactured ice cream with special reference to staphylococcus aureus

Abstract:
One hundred and twenty random samples of ice cream (40each from street vendors, small scale and large scale producers)collected from different localities in Sharkia Governorate, Egyptwere examined for their sanitary condition.Methylene blue reduction test of examined ice cream samplescollected from street vendors, small scale producers and large scaleproducers showed that l7.5%, 5%, 5%,20%, 50% and 25% weregraded I (good) and Il (fair) respectively.The mean value of total colony count/ml 111 examined icecream samples collected from street vendors, small scale producersand large scale producers were 2xl07±0.lxI07, 5.4xI06±0.2 x l O”and 7.6 xl 05 ±O.4 xl 05 respectively.Coliforms were present in 85%, 750/0 and 650/0 of examinedIce cream samples collected from street vendors, small scaleproducers and large scale producers with a mean value of 7.8xl06±O.7 xIO(’, 1.3 xl0s±0.1 xlOsand 1.1 xI04±0.1 x104,respectively.Escherichia coli could be detected in 20% and 50/0 ofexamined ice cream samples of street vendors and small scale
