Abstract:
Hormone residues in food proved to be potential carcinogensand risk to consumer.Poultry meat and it’s product as a source of protein and increasingof it’s product in markets (Chicken burger - luncheon - sausage -nuggets - liver and gizzard) .This work was carried out on 300 chicken product samples (50chicken burger - 50 luncheon - 50 sausage - 50 nuggets - 50 liver -50 gizzard). They were examined for the detection of estradiol orprogesterone residues by their extraction, preparation using highperformance liquid chromatography (HPLC) technique for estimationof resid ues level.The obtained results indicated that examined samples werefree from estradiol residues which of hormonal effect.Effect of administration of hormone on chickenThe aim of this part is to detect the hormone residue in thechicken products after known hormone administration.200 chickens (One day old) were kept under the sameenvironment conditions and were given the same ration, vaccinationand prophylactic program. By the end of 3rd week, chickens weredivided into 4 groups:-
