Abstract:
A total of 80 samples of frozen poultry cut - up products,unpackaged breast and thigh (25 of each) and packaged breast and thigh(15 of each) were collected randomly from different supermarkets andstreet vendors at Kalyobia govemorate. The collected samples wereexamined microbiologically by using the rinsing and blending muscletechniques for each sample.The bacteriological examination revealed that the log mean value of,Aerobic Plate Count of unpackaged frozen breast was (7.46 ± 7.04),packaged frozen breast (6.46 ± 5.70), unpackaged frozen thigh (6.95 ±6.41) and packaged frozen thigh (7.60 ± 6.94) for samples examined byrinsing technique, while they were 7.64 ± 6.84, 6.81 ± 6.50,6.75 ± 5.96and 7.77 ± 7.19, respectively, for samples examined using blending muscletechnique.The log mean values of total psychrotrophic counts for unpackagedfrozen breast, packaged frozen breast, unpackaged frozen thigh andpackaged frozen thigh were 7.l9 ± 6.71, 6.2 ± 5.68, 6.33 ± 5.69 and 7.14± 6.66, respectively, when examined by rinsing techanique, while theywere 6.69 ± 6.26, 6.08 ± 5.56, 5.92 ± 5.46 and 7.04 ± 6.54, respectively,when examined by blending muscle technique.
