Abstract:
Two hundred random samples, one hundred of raw milk and fifty each of yoghurt and ice cream collected from different localities in Egypt were subjected to microbiological examination.Microbiological examination of collected samples of raw milk,revealed that the mean count values of aerobic plate count of bulk tank, dairyshops and street vendors were 3.35 d05 ± 2.93 x105,1.22 x107 ± 1.16x 107and 6.79 <I 08 ± 2.28 <I 08, respectively. In yoghurt samples, the mean APe for large scale and small scale samples were 9.33 x 104± 7.95xl04, 2.23 x 106 ± 0.59 <I 06 , respectively, while in large scale and street vendors ice cream samples, the mean APe The mean Enterobacteriaceae count I ml of examined bulk tank, dairyshops and street vendors milk samples were 2.19 x 105 ± 1.90 x10s,7.47x106± 6.43 x 106and 3.59 x 108± 1.33 x 108, respectively.In large scale and small scale yoghurt samples the mean count were3.91 x 104± 3.20 x 104,1.37 x 104± 0.39 x 104, respectively.In ice cream the mean count of large scale and street vendors sampleswere 9.92 x 102± 2.63 x 102,9.31 x 105± 2.53 x 105, respectively.The mean coliform contents (MPNI ml. or g, .i.) of bulk tank, dairyshops and street vendors were 1.58 x 105 ± 1. 38 x 105,6.82 x 106± 5.99 x106 and 2.32 x 108 ± 0.86 x 108, respectively. While, in large scale and small scale yoghurt samples the mean count were 7.66 x 103 ± 7.06 x 103 and 4.53 x 104 ± 1.40 x 104, respectively. In examined ice cream samples of large
