Aerobic sporeforming bacteria in milk and some dairy products in Damietta Governorate

Abstract:
Fifty raw milk samples and 25 each of dried milk, hard cheese and icecream were collected from different localities in Damietta Governorate,Egypt. A survey was conducted to determine the incidence of Aerobicsporeformers and Bacillus cereus using Dextrose tryptone agar and Bacilluscereus medium.Of 50 raw milk samples and 25 each of dried milk, hard cheese andice cream samples (22) 44%, (14) 56%, (8) 32% and (11) 44% were foundto contain aerobic sporeformer respectively while (20) 40%, (12) 48%, (8)32% and (10) 40% were found to contain Bacillus cereus respectively.The obtained results showed that mean Aerobic sporeformer countswere 2.6xI04, 2.3xI04, 3.7xl03 and 2.4xl04, while the mean Bacilluscereus counts were 2.3xI04, 1.4xl03, 4.0x102 and 7.lxl03 in case of rawmilk, dried milk, hard cheese and ice cream respectively.The highest frequency distributions were lies within the range 102-105 (81.82%),103-105 (64.29%),102-104 (75%) and 103-105 (81.80/0) foraerobic sporeformer counts and 102-105 (85%), 102-104 (91. 6%), 10-104(87.5%) and 103-105 (70%) for Bacillus cereus counts in case of raw milk,dried milk, hard cheese and ice cream respectively.Bacillus cereus was showed high incidence (20) 40%, (12) 48%, (8)32% and (10) 40% in case of raw milk, dried milk, hard cheese and ice
