Abstract:
Ice-cream lS one of the most highly appetising and refreshing dairy products nutritiveespecially during ,hot weather when energy is apt to be at low ebb.One hundred random samples of frozen dairy desserts(ice-cream), collected from grocerles, supermarkets andpedlars in Mansoura City, Dakahlia, were checked bacterio-logically for determination of total colony count/g,incidence of coliform and incidence of some pathogenes.The mean value of total colony counts/gwhile coliform count of ice cream2.4XI04 and 1.04XI05 respectively.samples were,samples obtained from smallproducers and overall2.54XI05 respectivel ysamples were, 1.8XIOproducers,Out of 110 isolated coliforms obtained from overallr c e cream samples, 9 (9%) were Escherichia coli, 12 (12%)Enterobacter aerogenes, 21 (21%) Ent. cloacae, 5 (5%) Ent.a g g I om e ran s , 1 6 (16 % ) C i t rob act e r f r e un d i i, 4 ( 4 % ) C it.amalonaticus, 3 (3%) Cit. d i ve r s u s , 23 (23%) Klebsiellapneumoniae, 8 (8%) K. ozoenae and 9 (9%) K. oxytoca.Serological typing of isolated E. coli strains fromsmall scale samples revealed that serotypes 055; 0111;and 0125 could be identified, while 088; 0124 and
