Studies on the microbiological quality of raw and pasteurized milk in sharkia governorate

Abstract:
One hundred random samples of market (so each of raw and pasteurized milk) collected from different localities in Sharkia Govemorate were examined for their sanitary condition.All samples of market raw milk showed strong positive Guaiac test result and thus proved to be raw. While neither phosphatase nor peroxidase enzyme could be detected in all examined pasteurized milk samples.The results of keeping quality tests revealed that 56% of raw milk samples were precipitated with alcohol, while 6 samples were clotted on boiling.The mean acidity percent in market raw and pasteurized milk samples were 0 .18±0. 05 and 0 .13±0. 02 respectively. The microbiologicalexamination showed that the mean total colonycountlml in market raw and pasteurized milk samples were1.4xl011±O.8x1011 and 4.9x104±O.4x104 respectively.Coliforms could be detected in 100% and 50% of examined raw and pasteurized milk samples with a mean value of 9. 8x 1 06±3. 8x 106 and 2.4xl03±O.4x103 respectively.E. coli was present in 18% and 4% of raw and pasteurized milk samples respectively. Klebsiella oxytoca, K. pneumoniae, K. ozonae, Enterobacter cloacae, Ent. agglomerans, Ent. aerogenes, Citrobacter freundii and Cit. diversus could be isolated from 18%, 12
