Abstract:
Four hundred random samples of raw milk, Milk powder, kareish cheese and processed cheese (one hundred for each) were collected from Mansoura city, Dakahlia Governorate these samples were divided into two groups, each one contained two hundred samples (fiThe first group was checked upbacteriologically for incidence & counting of clostridia fml or gram with isolation & identification of the isolates.The incidence of clostridia was 40%) , 20%, 70% and 36~1o in examined raw milk, Milk powder, kareish cheese and processed cheese samples respectively with a mean count of 5 x 103 , 1.47 X 102 ,1.07 X 104 and 2.7 x 103 fml. g. respectively.
