Occurrence and Enumera Tion of Bacillus Cereus in Egyptian Dairy Desserts

Abstract:
A total of 200 random samples of dairy desserts including flavored ice cream. Mehallabia. rice pudding and custard (50 samples each). collected from different localities in Mansoura city.were subjected for bacteriological examination to enumerate andisolate ’Bacillus cerCSIL’.’Bacillus cercus could be isolated by using surface platingtechnique on MYP agar in 19 (38%): 22 (44%); 32 (64%) and 21(42%) samples of flavord ice cream. mehaIlabia: rice pudding andcustard respectively with various levels of contamination.The mean counts/g on MYP agar were9.68 X 10.1+3.43 x 10.1: 1.65 x 105 +0.56 x 105: 2.39 x 107 +1.50 x 107 and1. 7 x 105 +0.60 xl 05 cells/a, for flavored ice cream; Mehallabia:. rice pudding and custard samples respectively. All isolated Bacillus cercus were highly sensitive to 8 of 13antibiotics (Streptomycin. chlormephenicol; Tetracyline: BacitracinKanamycin: Gentamycin: Erthyromycine and Neomycin). While 86.21 %; 70.53% and 68.28% of isolates were sensitive to Naledfxfc acid. Ampicillin and Cloxacillin respectively. All isolates of /Bacillus cercus were resistant to colistin (Polymyxin E.).
