Study of proteolytic psychrotrophic microflora in raw buffaloe,s milk

Abstract:
Two hundreds random raw buffaloes’ milk samples were collectedfrom different dairy farms in Sharkia Govemorate, Egypt. A survey wasconducted to determine the incidence of psychrotrophic and proteolyticPsychrotrophic bacteria in raw buffaloe’s milk using standard plate countagar and skim milk agar respectively.To isolate and identify proteolytic Psychrotrophic bacteria and tostudy the proteolytic activity of isolated proteolytic Psychrotrophic bacteriaon skim milk agar medium at 25°C for 48 h.Of 200 raw buffaloes’ milk samples tested (200) 100% were found tocontain psychrotrophs, while (140) 70% were found to contain proteolyticpsychrotrophs.The obtained results revealed that the psychrotrophic count (7°C/l 0days) was ranged from 102 to 7 .2x 107 with a mean value of3.0xl06±6.6xl05 with highest frequency distribution (69%) lies among104 -107, while proteolytic psychrotrophic count was ranged from 10 to 6.0xl05 with a mean value of 3.0xl04±6.9xl03 with highest frequencydistribution (72.1 %) lies among 102-105Out of 475 isolated proteolytic Psychrotrophic bacteria, 100 (21. 06%)were Pseudomonas spp., 91 (19.16%) Alcaligenes spp., 64 (13.47%),Enterobacteriaceae, 63 (13.26%) Acinetobacter spp., 55 (11.58%),
